Chef Lents nightly dinner menus, which include a la carte and multi-course tasting offerings, showcase only the highest quality ingredients.
Since his appointment this past January, Chef Lents exciting new programming features a thoughtful approach to progressive dinning, forged through French technique.
A variety of seasonal starters incorporate selections such as King Crab Leg and Osetra Caviar with endive and cucumber salad with coriander flowers and citron dressing; and Black Truffle and Shallot Tarte with tender winter greens with aged xeres vinegar and smoked lardons. The main dishes are equally diverse and include Brittany Coast John Dary with Bloomsdale spinach, sunchokes and porcinis with a Cotes du Rhone reduction; and Ribey of American Wagyu Beef with Flavors of Bearnaise with Crisp shallots, potato puree and fresh horseradish.

Chef Lents was appointed executive chef of Sixteen after working in the worlds most celebrated fine dinning establishments.
The Chicago's four star restaurant Everest under Chefs Jean Joho and Thierry Tritsch, the Michelin two star-rated Thornton Restaurant inside the Fitzwilliam Hotel in Dublin, Ireland are just a small portion of his career.

Chef Lents staged several acclaimed kitchens including the Michelin three star-rated Waterside Inn in Bray and Le Manoir Aux Quatres Saisons in Great Milton.

Upon returning to the United States, Thomas accepted a position at the Michelin three star-rated, five diamond Joel Robochon at The Mansion inside Las Vegas MGM Grand and then to San Francisco's Michelin-rated Quince Restaurant.

Chef Fahy brings experience presenting exquisite pastries at some of the worlds most reputable dining establishments to his position at the Sixteen.
Before The Trump International Hotel & Tower he served as executive pastry chef for the Sofitel Chicago, Water Tower where he oversaw all aspects of the hotels pastry operations including its contemporary French restaurant Cafe Des Architectes, and received national recognition as a nominee in Food & Wine's "People's Choice Best New Pastry Chef" awards.
Chef Fahy has been awarded a James Beard Foundation Award nomination in the Outstanding Pastry chef category, Jean Banchet's "Celebrity Pastry Chef" Award and "Pastry Chef of the Year" by the Chicago Tribune.
Complementing Sixteen's exciting cuisine is an old and new world wine list of over 700 labels, presided over by Director of Restaurant Will Douillet, who holds an advanced degree from the Master Court of Sommeliers.
For early morning and mid-day dinning, Sixteen offers exquisitely prepared fare.
Daily specialties which change regularly include Truffle Texas Toast with lobster, spinach, poached egg, roasted tomato and hollandaise sauce; Scrambled Eggs with Smoked Bacon and fresh mint with caviar; Rushing Water's Rainbow Brook Trout with Cobb bacon, peas, white beans, lemon and brown butter; and many other delightful dishes.
